Whole Wheat Spaghetti and Meatballs


Ingredients:

  •  1 1/2 pounds ground extra lean beef
  •  1 tablespoon grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
  •  1 large egg
  •  1 cup grated parmesan cheese
  •  1/2 cup whole wheat bread crumbs with Italian seasoning
  •  Handful of chopped parsley leaves
  •  3 tbsp extra-virgin olive oil
  •  Canned or homemade tomato basil spaghetti sauce
  •  100% whole wheat spaghetti noodles

Preparation:

Preheat oven to 425 degrees F.
Bring pot of salted water to a boil and add handful of whole wheat spaghetti noodles. Cook for 10 mins until done and drain. Place ground beef in a bowl and season with grill seasoning. Add egg, half of the grated cheese, bread crumbs, parsley, and a drizzle of extra-virgin olive oil to the bowl. Mix the meat and form 12 large meatballs. Bake the meatballs 20-30 minutes until golden and firm.
Remove the meat from oven and loosen with a thin spatula. Place on top of spaghetti and pour tomato
sauce on top. Sprinkle with rest of parmesan. cheese and parsley.
