Saucy Salsa Chicken

- 1 tablespoon extra-virgin olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 (14-ounce) can low-sodium tomato sauce
- 1/4 cup tomato paste
Garlic Pesto Stuffed Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 cubes of light laughing cow cheese (garlic and herb flavor)
- Garlic Pesto
- Salt and freshly ground black pepper
- Olive Oil cooking spray
Chicken Parmesan Meatball
Ingredients:
- 1 1/2 pounds ground lean chicken
- 1 tablespoon grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
- 1 large egg
- 1 cup grated Parmesan Cheese
- 1/2 cup whole wheat bread crumbs (pulsate 2 slices of 100% whole wheat bread) with Italian seasoning
- Handful of chopped parsley leaves
