Ingredients:
- Whole wheat Jumbo Shells (if can't find, roll up whole wheat lasagna noodles)
- 2 c. (8 oz.) shredded Mozzarella cheese
- 2 c. low-fat cottage cheese
- 1/2 c. grated Parmesan cheese
- 2 tbsp. parsley flakes
- 1 tsp. oregano
- 1 tsp salt
- 1 tsp pepper
- 1 (32 oz.) jar spaghetti sauce
Preparation:
Cook shells according to package directions; rinse, drain and set aside. Combine Mozzarella cheese,
cottage cheese, 1/4 cup parmesan cheese, parsley flakes, salt, pepper and oregano. Stir well. Stuff shells mixture. Place stuffed shells in a baking dish. Spoon spaghetti sauce over shells; sprinkle
with rest of parmesan cheese. Cover tightly with foil and bake at 350 degrees for 45 minutes until
heated through.
